Great Low Carb & Fiber Alternative for Atkins & Diabetic's May 19, 2010 K. Omori (California) Seller ships quickly & great bargain compared to supermarket prices & grinding the raw seeds yourself. There are recipes online for a Focaccia flat bread & we just made some muffins with walnuts & almonds that turned out pretty good. The bread is dark like a bran & consistency of banana bread & was thinking of experimenting & mixing with almond flour or regular flour to see how it turns out. Don't expect it to be like your supermarket loaf of bread but at 0 net carbs, you can have a great alternative to sandwiches, snacks & fiber. Check out the links & enjoy:

Tasty Omega 3s! April 21, 2009 Noisy Duck (Fort Morgan, CO USA) This Flaxseed meal is a very tasty and easy way to get more Omega 3 oils and fiber in your diet. It's much less messy to use than flaxseed oil, and tastes better. It is great on foods like yogurt, apples, and cottage cheese, and it's even surprisingly good added to pancake, cookie, and muffin batters.
My cattledog (Red Heeler) even likes flaxseed meal on her food, and it has improved the condition of her skin and coat tremendously. She used to shed constantly, and scratched and chewed herself raw. Now she doesn't itch nearly so much, her coat is thick and soft, and she only sheds twice a year. (My vet recommended a short tablespoon of flax meal per 10 pounds of body weight every day for the itching.) If you use dry dog food you have to mix a little water in so the flax meal sticks to the food.

I've been using this product for a couple of years, adding it to oatmeal or oat bran in my morning cereal. It gives the cereal a nice texture and a nutty flavor. Best of all, it solved regularity problems, which ranged from constipation to irritable bowel syndrome.

I love Bob's Red Mill products and the flaxseed meal is no exception. I eat this nearly everyday in a hot breakfast cereal. The nutritional content is incredible and the flavor can be easily modified for sweet or more bread-like recipes. I bought this 4-Pack of 32 oz. bags from Amazon, thinking about what a great value it was with free shipping and all, but found a better deal elsewhere (VitaCost sells it for less, even with shipping). Although I will continue to purchase Bob's Red Mill Flaxseed Meal, it probably will not be through Amazon.

I am on a low-carbohydrate diet for my Type 2 diabetes. Flax meal in moderate portions doesn't seem to affect my blood sugar at all.
I make flax meal pancakes (flax meal, eggs, baking powder, salt, vanilla, and Splenda) with sugar-free syrup. I gave flax meal a 4-star rating instead of a 5-star rating because the flax bread that I made was horrible. Absolutely horrible. Flax meal is great for muffins, cakes, pancakes, and cookies - basically, anything that's sweet. Flax sort of has a naturally sweet quality to it. It's not so great in bread.
