In the 17 years I have had Celiac disease, this is the best flour for making pastry. Being british our tradition foods for Christmas are quite a lot of pastry items & plum pudding, or some call it figgy pudding. This is the mix, It is perfection and not gritty like so many others I've tried. I use it for everything.

I've been GF now for 11 years. I think I've tried just about every GF flour on the market. The Orgran Self Raising Flour is the BEST tasting flour out there. It mimics wheat flour the closest and my family cannot tell the difference!!!! Now I don't have to make two kinds of cookies, breads etc. Life is good. This is the most amazing gluten free flour I have ever used. I have been cooking and baking with gluten free flour for over two years and have never found anything like this. The texture is what is so different. It is smooth like regular wheat flour. I made sugar cookies for Christmas and rolled them out just like regular cookies. They were amazing. My family could not tell the difference. I was always intimated by making my own flour mix. This works so well, just use it cup for cup like regular flour.
