Product Description Let's Do. Organic Coconut Flour is made from certified organic fresh coconuts. After separating the rich, white coconut meat from its shell, we use pressurized steam to remove most of its fat. We thoroughly dry the defatted coconut before milling it to a fine cream colored flour. Although its texture is very similar to wheat flour, Let's Do. Organic Coconut Flour is completely gluten free, high in fiber and more than 20% protein. Organic Coconut Flour is wonderful in baked goods, and delicious in your favorite smoothies (with the benefit of adding healthful protein and fiber). Let's Do. Organic Coconut Flour may replace wheat flour completely in many recipes with great results (see our Brownies recipe below for a perfect example). In other recipes you may only want to replace up to 25% percent of the wheat or other grain flour with coconut flour. When you replace other flour in recipes, be sure to increase your liquid by the same measure. For example: if your recipe calls for 2 cups of flour and 1 cup of water, you could use ½ cup coconut flour plus 1½ cups any other flour, and then you must add an additional ½ cup water to total 1½ cups liquid. This coconut flour is a great source of dietary fiber! August 12, 2010 Linda I used to buy organic coconut fiber to add to smoothies as a source of dietary fiber, but it became unavailable. The manufacturer suggested I substitute coconut flour, which is really the same thing but more finely ground. This is the fiber left over from coconut after most of the oil is removed, and it is an outstanding low carbohydrate source of dietary fiber. It absorbs a great deal of water, which is excellent for elimination. The coconut fiber cured my 87 year old mother's problems with constipation after years of trying other remedies that didn't work. I've tried other finer ground coconut flours in smoothies or mixed with yogurt, but none were as palatable as Let's Do Organic because they were too finely ground and over-thickened the mixture. This brand also has the best coconut taste of any I've tried, and it is excellent in my low carb, high fiber and protein pancake recipe. It also makes an excellent low carb, high fiber coating for fried or sauteed seafood, especially when mixed with rice protein powder. More people should be aware of the health benefits of coconut fiber. I'm sending a six pack of this to my mother. Since the other coconut fiber is no longer available, I'm sure she'll be relieved! lol!!
Be aware - shipped through USPS ! ! ! August 6, 2010 Summer (USA) Let's Do Organic has EXCELLENT products. In fairness, I cannot give less than 5 stars for the PRODUCT.
My gripe is with the SHIPMENT of Let's Do Organic's products through USPS (United States Postal Service), even though I have a prime account.
As many know, the USPS tracking number is WORTHLESS; no mention of a parcel's travel is posted often for three or four days.
Additionally, many times boxes shipped through the USPS arrive damaged or open and some or all contents missing.
Surely, a better shipping arrangement can be made with UPS or FEDEX ground.

Yes, this flour is not as fine, however it is absolutely the best for my favorite banana muffins. The muffins come out angle-soft inside, have nice texture, and a good-looking golden crust. I use
2 eggs
1 cup of buttermilk
2 ripe mashed bananas
1/4 cup of oil
2/3 cup packed light brown sugar
1 cup of organic coconut flour
3/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
bake about 20 min

I've used it for brownies (recipe on back) and it's wonderful. Plus it makes a great coating for grilling seafood. I also add it to cereal to slow the carbs down and used it in meatloaf instead of grains. You'll want to get the cookbook. Very pleased.
