We know why we buy coconut flour but how do you use it? Well this book tells you how. Its different and has to be used in its own way. From personal experience the recipes work. No more gluten, no more wheat, hurrah!

I was interested in baking with coconut flour. I thought it would be a good alternative to brown rice flour. I bought this book a few months ago and have maybe made 3 recipes. The recipes call for a lot of eggs! My husband is allergic to eggs so this book is not right for our needs. I did make the Triple-Layer Chocolate Cake for a party and everyone loved it (though the recipe calls for 18 eggs!). The recipes also call for a lot of sugar which we limit in our family. The other recipe that we tried and liked is the Walnut-Raisin Muffins (I used coconut oil instead of butter and it worked great).
This book is great to add to your GF / CF library if you don't have a problem with eggs.
