Yes, it mixes, kneads, rises, and bakes bread in three loaf sizes up to 2-1/2 pounds. But its digital controls go much further, offering settings for white, whole wheat, multigrain, and French (crisp crust, open texture) breads, each made according to what's best for that particular style. Other settings permit rapid baking and baking sandwich bread with a soft crust. For raisin (or other dried-fruit) bread, a beeper signals when to add the fruit so it's not crushed during kneading. Crust color--dark or light--can be selected as well. The machine automatically adds yeast at the proper time from a dispenser on the unit's lid. I bought this Panasonic bread maker to replace an older Oster 5838 ExpressBake Breadmaker, White. I had been happy with the Oster and would still recommend that model; however, all the good reviews of this machine convinced me to give this a try instead.
Hands down, this bread maker bakes the best bread I've ever had out of a machine. I've owned bread machines ever since the first model, a DAK, was introduced to the public, and I've been through DAK, Well-Built, Oster, and now this one. The texture of a bread kneaded and then baked in the Panasonic is superior to all of them. It bakes a horizontal (traditionally shaped ) loaf that, when sliced, just barely fits into my toaster slots. (Round loaves must be cut in half and, even then, can stick out.) The secret to this seems to be with the settings: Basic, Whole Wheat, Multi-Grain, French, and Pizza. These special settings seem to handle the dough with better results that similar settings on the Oster. If you want a free form loaf, you may select "dough" on any of the above, and the bread maker stops just short of baking. You may choose between a light or dark crust on some settings; it's a little frustrating that this option disappears on some, such as Whole Wheat. Another crucial feature to baking such good loaves is the ability to choose between loaf sizes -- Medium (the usual 3 cup flour recipe), Large, and X-Large.
The Panasonic is incredibly quiet and solidly built for a bread machine; unlike some brands, you won't find this one walking off the counter. I like the inclusion of a yeast cup that automatically releases at the appropriate time in the cycle, keeping the yeast from the wet ingredients, so the user doesn't have to worry about burying it in flour or creating a "bowl" in the top of the flour. With other brands, this separation doesn't matter as much since, unless you are using the timer, the machine starts right away. The Panasonic uses the first 30 minutes to bring the ingredients to room temperature (more on that later), so it's almost like using it on a timer. The heavy weight pan locks into the unit more securely than with other brands. It also has a ten minute battery back up, which means that you won't have to dump the dough in the event of a short power failure. The programmable timer allows you to plan up to nine hours ahead. You can set it up before you go to work and have fresh, warm bread for dinner.
As with any appliance, there are drawbacks. This unit is large--much larger than any bread maker I've owned, and it takes up substantial space on the counter, at 14 " tall, 13" wide, and 9 " deep. The lack of window means that you can't see the dough as it is mixing, so you have to open the top to make sure the moisture is correct. Setting up each cycle can be confusing at first, as the controls are not as intuitive as they should be. If you hit start and then find out you've made a mistake, you can't cancel; instead, you have to unplug the machine for 15 minutes (to override the battery back-up) and begin again.
The only thing that truly bothers me about this machine is the inability to override that first 30 minutes of bringing ingredients to room temperature, which means that the cycles take at least that much longer. I'm used to using fast-rising yeast and warm ingredients on a dough setting to whip up French bread or focaccia dough in an hour and a half. I just can't do that with this machine. In addition, some of the settings take a full five hours. The good news is that the pizza setting creates dough in only 45 minutes, faster than the others -- plus the extra large capacity allows me to make more pizza dough.
I suggest buying a bread machine cookbook instead of trying the manufacturer's recipes. I didn't even bother trying the ones in the manual since I've never had luck with handbook recipes -- well, except for the DAK, which spread its popularity based on its cookbook. Once you learn the proper proportion of ingredients, an extremely important part of bread making, you can create your own recipes.
The lifespan of a bread maker is limited, so potential buyers may want to factor in cost. I've never owned one longer than 5 years. One model walked off the counter and crashed. The motor in one burned out. My latest Oster's bread pan started leaking oil into the bread. I cannot attest to the longevity of the Panasonic, but its relatively quiet operation suggest to me that it may last longer; however, I have no way of knowing this.
This makes an excellent gift/purchase for both the gourmet and the health-conscious cook. Highly recommended.

Works great! November 13, 2008 T. Franke (Cincinnati OH) So I read the reviews, and searched extensively for just the right bread machine. This one had a lot of positive marks and happy customers, so i got one. Tried it out today and whattya know - it did a really great job! Just a plain white bread recipe, easy, but it came out perfect. It didn't seem too loud at all and the directions are simple. I'm on my way to loaves of healthy bread, aromatic kitchens, and happy eaters.
Only drawback is there is no viewing window, and you have to really refrain from peeking as it resets the timer (so it says), but that was the worst of it.
